Upstream, curdlan production relies on typical microbial polysaccharide fermentation raw materials: corn or tapioca starch hydrolysates, glucose or sucrose as carbon source, plus nitrogen sources (corn steep liquor, ammonium salts, yeast extract) and trace minerals, fermented by curdlan-producing strains such as Alcaligenes faecalis var. myxogenes or Agrobacterium sp., followed by alcohol precipitation, filtration, drying and milling. Downstream, curdlan is widely used as a gelling agent, water-binder, texturiser and film-former in meat products, noodles, surimi and seafood, prepared foods, dairy and plant-based products.
In 2024, global sales of food grade curdlan gum reached approximately 2,889 tons, with an average global market price of around US$11,376/ton. Production capacity varies significantly among manufacturers, with gross profit margins ranging from approximately 25% to 50%.
Curdlan's molecular structure is a linear glucan composed of D-glucose through β-1,3 glycosidic bonds. It can form a low-strength thermoreversible gel when heated to 55°C, and a thermoirreversible gel when heated to 80-145°C.
Curdlan has a variety of properties, including thermogelation, thermal stability and freezing resistance. The properties of curdlan determine that it can be widely used in the food industry. Curdlan is usually used as a food improver such as stabilizer, coagulant, thickener, water-holding agent, film-forming agent, adhesive, etc., and is used in meat food processing, noodle products, bionic vegetarian food, aquatic products, prefabricated products, etc. The current food industry is also the most important market for curdlan, accounting for more than 80% of the market share.
